step 1: leaves
For one cup, measure out 4 grams into your teapot or brew mug.
step 2: water
Heat 250ml of water to 95°C.
step 3: time
Pour your heated water over the leaves and steep for 4 minutes.

The leaves are harvested from unusual Benifūki cultivar plants, and then withered, rolled, oxidised and dried using artisan methods to develop a gorgeously complex and intense flavour. Similarly, the tea producer’s commitment to environmental farming techniques – chemical pesticides and fungicides have not been used for over twenty years – and the garden’s mountainous climate mean the tea’s terroir is exceptional. Look for surprising, harmonious and beautifully balanced notes of stone fruit and biscuit.

Ocha-no-Kajihara is run by Toshihiro Kajihara, a 3rd generation tea farmer based in the rural mountain village of Tsuge in Ashikita Village, Kumamoto. The tea fields are dispersed across the tiny village and mountains – and cannot be accessed by the large machinery commonly used in tea production.
Toshihiro’s teas have won numerous awards over the years for their extraordinary flavour profiles – and his runaway success at The Leafies 2022 speaks to a tea master at the very height of his powers.
